Yeah, yeah, I know, another chia pudding recipe, but I love these little seeds!! Not only are they super good for you, but they are an absolute cinch to make puddings with, and are good for breakfast, snacks or dessert. And this one is fruity, so I’m giving you options people. I’m nice like that.
- Mush the raspberries slightly with a fork and put in a large jar along with the honey, vanilla and zest. Stir a little to dissolve the honey.
- Add the chia and coconut milk and give the whole thing a really good shake.
- Pop in the fridge overnight or at least 8 hours.
200 grams frozen raspberries, defrosted
3/4 cup coconut milk
2 tablespoons honey
4 tablespoons white chia seeds
1/2 teaspoon lime zest
1/2 teaspoon vanilla extract
