Pecan and Date Muffins

I love muffins! I can’t believe it’s taken me this long to post a muffin recipe. Madness. Anyway, these are a nice dense texture, not overly sweet and a winning flavour combo. I hope you agree.


Preheat oven to 160 degrees.
Line a 12 hole muffin pan with paper baking cases.
Pulse your pecans in your food processor until reasonably fine (this only takes a matter of seconds).
Mix both nut flours in a bowl with other dry ingredients.
Add you wet ingredients and combine well.
Stir through your chopped dates (I chopped mine with kitchen scissors, way easier!) and spoon into the cases.
Bake for 20 minutes.


  • 2 cups almond flour
  • 1/2 cup pecans
  • 1/4 cup coconut oil (melted)
  • 1/4 cup maple syrup
  • 3 eggs
  • 6 dates, chopped
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
