I’m pretty confident that when Snoop Dogg gets the munchies, he’d like nothing more than a batch of my healthy Jam Drops to sort him out.

Fo shizzle my nizzle….

Method

Preheat oven to 175 degrees Celsius.

Line a baking tray with baking paper.

In a bowl, mix all dry ingredients together.

Add the egg, honey and coconut oil and combine well.

Take small spoonfuls of mixture and gently roll into a ball (should be slightly smaller than a ping pong ball). Mine were approximately 35g each  (yes, I weighed them. Yes, I’m a bit anal sometimes). Continue until you have 12 balls.

Space the balls out on the lined tray. Gently flatten them, so they are about 1.5cm thick.

Make a shallow indentation in each cookie with your thumb or back of a teaspoon.

Spoon 1/2 teaspoons of jam into the indentation.

Bake for 13 minutes.

Makes 12 cookies.

  • 1 1/2 cups almond meal
  • 1/4 cup desiccated coconut
  • 2 tablespoons coconut flour, sifted
  • 1 tablespoon baking powder
  • 1/3 cup coconut oil, melted
  • 1/3 cup honey
  • 1 egg
  • 6 teaspoons Paleo jam (find recipe here)
