Chai Latte Muffins

Method
Preheat oven to 175 degrees celsius
Line 8 holes of a muffin tin with paper muffin cases
Mix together all dry ingredients in a bowl
Add all wet ingredients and combine well
Spoon mixture evenly amongst the 8 cases
Bake for 18-20 minutes
Cool muffins on rack
Mix the glaze ingredients together in a small bowl and drizzle onto cooled muffins
Makes 8.

Ingredients
- 2/3 cup coconut flour, sifted
- 1/3 cup tapioca starch
- 1/2 cup coconut sugar
- 1 teaspoon baking soda
- Pinch sea salt
- 1 teaspoon ground cardamom
- 1/2 teaspoon cinnamon
- 1/4 teaspoon each of ground ginger, nutmeg, allspice and ground cloves
- 100ml espresso coffee, cooled
- 4 eggs
- 1/2 cup coconut milk
- 1/2 cup coconut oil, melted
- 1 teaspoon apple cider vinegar
- 1 teaspoon vanilla extract
FOR THE GLAZE
- 1 tablespoon coconut butter
- 1 tablespoon espresso coffee
- 1 tablespoon coconut milk
- 1 teaspoon maple syrup
