Don’t like the fish-eggy texture of a chia pudding? I got you. Those seedy little suckers whizz up nicely to make this smooth and creamy tropical treat. I know it says its for 2, but I wont judge if you eat it all yourself.
Mango Pudding

Method
Throw all ingredients into a high speed blender and whizz together to a nice creamy consistency. Pour into 2 serving glasses and chill for a couple of hours to firm up.
Makes 2 one-cup serves.

- 1 cup mango flesh
- 1 cup coconut milk
- 3 tablespoons chia seeds
- 1 tablespoon honey/maple syrup
- 1/4 teaspoon ground ginger
- Zest of a lime
