This is total comfort food minus the calories! Perfectly spiced, it tastes just like something your nanna would bake. Ideal as afternoon tea, but I’d be lying if I said I hadn’t had this for breakfast too!
Spiced Apple Cake
Method
Preheat oven to 180 degrees Celsius.
Grease a 20cm round cake tin with coconut oil and line base with baking paper.
Mix all dry ingredients together in a bowl.
Add wet ingredients and combine well.
Pour into tin and level out (mixture will be quite thick).
Decorate top with sliced apple, cinnamon and coconut sugar.
Bake for 55 minutes to 1 hour.

- 2 1/2 cups almond flour
- 1 1/2 tablespoons coconut flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon each of cinnamon, nutmeg and ground cardamom
- Pinch sea salt
- 1 teaspoon vanilla extract
- 2 eggs, lightly beaten
- 1 cup unsweetened apple purée/sauce
- 1/4 cup maple syrup
- 2 tablespoons coconut oil (plus a little extra for greasing tin)
To decorate…
1 green apple, cored and sliced thinly
Couple of pinches each of cinnamon and coconut sugar
