Mango Goji Berry Bites

I know I make a lot of recipes with mango, I love the stuff. If you don’t like mango, well, I’m not even sorry. I just think you’re weird because it’s delicious.
I also like making up recipes for tasty little energy balls because they are so damn easy, they are no-bake, and they are the perfect little sweet treat.
Just make sure you read the pack when buying your mango, so many brands have sugar added to them (God only knows why, like, it’s not like they aren’t sweet enough already)!

Method

Put the mango in a bowl and cover with water to soften for 1/2 hour, then drain.
Soak your goji berries in water in another bowl for 10 mins and drain.
Put everything but the gojis in a food processor and whizz together, scraping down the sides if you need. It should be like cookie dough texture.
Throw in the gojis and whizz them through for a couple of seconds. You don’t want them to break down, just to mix through the dough.
Roll into little bites and roll into coconut.
Pop them in the fridge to firm them up (about and hour).
They are best eaten straight from the fridge.

Ingredients

  • 2 1/2 cups of dessicated coconut, plus a little extra to roll them in
  • 100 grams unsweetened dried mango
  • 2 tablespoons goji berries
  • 1/4 cup coconut oil
  • 1 tablespoon honey (optional)
  • Zest and juice of 1 lime
