Cranberry Sauce

Well it’s that time of year again, so I thought I would ‘clean’ up one of your festive favourite accompaniments to have with the perfect turkey. It’s super simple, takes no time at all, and you can prepare it ahead of time for the big day.

 

Method

Put all ingredients in a saucepan on a medium heat and bring to the boil.

Lower the heat to a gentle simmer. The cranberries will begin to burst and the sauce will start to thicken. Simmer away for about 20 minutes and remove from heat. Sauce will thicken more as it cools.

Don’t forget to remove the star anise before storing or serving.

Ingredients

  • 12 ounce bag of fresh cranberries (approximately 340 grams)
  • Juice of 2 oranges (makes about a cup)
  • Zest of 1 orange
  • 1/2 cup of honey
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 star anise
  • 1 tablespoon pomegranate concentrate (unsweetened)
