Baked Peaches with Nut Crumble

Do you remember that song ‘Peaches’ by The Presidents of the United States of America? Such a stupid song, but so damn catchy!
When I was a kid, my mum grew peach trees in our backyard and just like the song, every summer there was millions of peaches, peaches for me! De-licious!
This is a simple dessert to knock together, but topped with some coconut yoghurt, I think it would make quite the fancy  addition to your weekend brunch menu…

 

Method

Heat oven to 200 degrees Celsius.
Halve peaches and take out stones.
Place them cut side up in a baking dish and drizzle with 2 tablespoons of the oil and 2 tablespoons of the honey. Bake for 30 minutes.
In the meantime, whizz the nuts in your food processor to a rough crumble.
Heat a small pan over medium heat. Pop in your nut crumble, spices and the remaining oil and honey, mixing it all together and heating it through.
Spoon the nut crumble over the warm peaches and top with coconut whipped cream or coconut yoghurt.

  • 4 peaches
  • 4 tablespoons coconut oil
  • 4 tablespoons honey
  • 1 cup mixed nuts (I used almonds, walnuts and hazelnuts)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
