I’m pretty confident that when Snoop Dogg gets the munchies, he’d like nothing more than a batch of my healthy Jam Drops to sort him out.

INGREDIENTS
- 1 1/2 cups almond meal
- 1/4 cup desiccated coconut
- 2 tablespoons coconut flour, sifted
- 1 tablespoon baking powder
- 1/3 cup coconut oil, melted
- 1/3 cup honey
- 1 egg
- 6 teaspoons Paleo jam (find recipe here)
Method
- Preheat oven to 175 degrees Celsius.
- Line a baking tray with baking paper.
- In a bowl, mix all dry ingredients together.
- Add the egg, honey and coconut oil and combine well.
- Take small spoonfuls of mixture and gently roll into a ball (should be slightly smaller than a ping pong ball). Mine were approximately 35g each (yes, I weighed them. Yes, I’m a bit anal sometimes). Continue until you have 12 balls.
- Space the balls out on the lined tray. Gently flatten them, so they are about 1.5cm thick.
- Make a shallow indentation in each cookie with your thumb or back of a teaspoon.
- Spoon 1/2 teaspoons of jam into the indentation.
- Bake for 13 minutes.
Makes 12 cookies.
