Christmas Cookies

Christmas is coming and you know what that means….Christmas treats!!
So why not start your festive baking off with these super easy cookies?

Method

Preheat oven to 180 degrees Celsius.
Line a baking tray with baking paper.
Mix together nut butter, egg, honey, zest and salt in a large bowl.
Add the spices and baking soda, combining well.
Mix through the cranberries and almonds.
Lastly, add the coconut flour and mix through the dough well.
Place spoonfuls onto prepared tray and bake for 10 minutes.

Makes 12 cookies.

TIP- I like to add the coconut flour last as it begins to stiffen the mixture immediately. Adding it last means all the other ingredients are well combined already and you don’t have to work too long with a hard-to-mix dough.

Ingredients

  • 1 cup almond butter
  • 1/3 cup honey
  • 1 egg, lightly beaten
  • Zest of 1 orange
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon all spice
  • 1/4 teaspoon each of ground ginger, nutmeg, cardamom
  • Pinch sea salt
  • 2 tablespoons coconut flour, sifted
  • 1/3 cup dried cranberries
  • 1/3 cup whole blanched almonds
