Chai Latte Muffins

Yes I know I’ve named these muffins after a sorority cheerleaders Starbucks order, but these bites of yum are far from basic. Get in ma belly…

INGREDIENTS

  • 2/3 cup coconut flour, sifted
  • 1/3 cup tapioca starch
  • 1/2 cup coconut sugar
  • 1 teaspoon baking soda
  • Pinch sea salt
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon each of ground ginger, nutmeg, allspice and ground cloves
  • 100ml espresso coffee, cooled
  • 4 eggs
  • 1/2 cup coconut milk
  • 1/2 cup coconut oil, melted
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon vanilla extract

FOR THE GLAZE

  • 1 tablespoon coconut butter
  • 1 tablespoon espresso coffee
  • 1 tablespoon coconut milk
  • 1 teaspoon maple syrup

METHOD

  1. Preheat oven to 175 degrees celsius
  2. Line 8 holes of a muffin tin with paper muffin cases
  3. Mix together all dry ingredients in a bowl
  4. Add all wet ingredients and combine well
  5. Spoon mixture evenly amongst the 8 cases
  6. Bake for 18-20 minutes
  7. Cool muffins on rack
  8. Mix the glaze ingredients together in a small bowl and drizzle onto cooled muffins

Makes 8.
