Coffee. I love the stuff. It smells awesome, tastes awesome and my morning cup makes me feel like I’ve got my shit together. I don’t, but it makes me feel like I do. So it really was a no-brainer to make it into a cookie flavour so I could have my coffee and eat it too….
- 1 cup cashew butter
- 1 egg
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 tablespoon coconut sugar
- Pinch sea salt
- 1 1/2 tablespoons ground coffee
- 1/4 cup cacao nibs
- 1/4 cup pecans, roughly chopped
- 3 tablespoons coconut flour, sifted
- Preheat oven to 180 degrees Celsius.
- Mix together the cashew butter, egg, maple syrup, vanilla, salt, baking soda and coconut sugar.
- Add the cacao nibs and ground coffee and combine.
- Fold through the chopped pecans.
- Sift in the coconut flour and mix well.
- Let the mix sit for a few minutes to thicken.
- Scoop out big spoonfuls onto a oven tray lined with baking paper.
- Bake for 13-15 minutes.
Makes 12 cookies.
- because the coconut flour thickens the mixture, I find adding it last helps you get everything else combined well while the mix is still reasonable runny.
- the cookies will seem quite soft and spongy to the touch when you take them out of the oven, but harden up with cooling.
