Banana Muffins

Never make eye contact while eating a banana. It’s a rule. Making eye contact while eating one of these banana muffins however, is perfectly acceptable. So are high fives and bum taps.
These are a cinch to make. I whizz mine up in the food processor to make it even easier.

2 cups almond flour
1/2 cup coconut flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon allspice
1 teaspoon nutmeg
1/2 teaspoon sea salt
1 teaspoon vanilla extract
2 overripe bananas, mashed
5 eggs, lightly beaten
1/2 cup honey
1 tablespoon apple cider vinegar
2 tablespoons coconut oil
1/2 cup walnuts, roughly chopped.

Preheat oven to 180 degrees Celsius.
Line a muffin tin with paper cases.
Mix all dry ingredients together (except walnuts) in a bowl or food processor.
Add wet ingredients and combine well.
Stir through the walnuts.
Spoon evenly into the 12 cases and bake for 30 minutes.
